Coffee mousse

Method
1. In a chilled bowl, whip the double cream and icing sugar until stiff peaks form.
2. Gently fold in the cooled coffee and vanilla extract.
3. Divide mixture into ramekins or martini glasses and serve immediately, or chill for a firmer consistency.
Coffee and chocolate bark
Equipment
- Baking sheet
- Baking paper
- Microwave or bain marie

Method
1. Line a baking sheet with parchment paper.
2. Melt the chocolate chips together in a microwave or in a bain marie.
3. Stir in the instant coffee granules.
4. Pour the chocolate mixture onto the prepared baking sheet and spread it evenly.
5. Sprinkle with sea salt flakes (optional).
6. Let the chocolate harden in the refrigerator for about 10 minutes.
7. Break into pieces and serve on a platter, or crumble over ice cream (optional).
Coffee yoghurt parfait

Method
1. In a bowl, combine the yoghurt, cooled coffee, and honey.
2. Divide the mixture into individual glasses.
3. Layer the yoghurt mixture, granola or crushed nuts, and fresh berries in each glass. Repeat layers as desired.

Method

Classic tiramisu

2. Dip sponge fingers in the coffee mixture and arrange in individual ramekins or your large bowl.

Method
1. Divide the brownie mix, coffee granules, and water evenly among the 6 mugs.
