How to make our coffee and walnut cake recipe

Equipment

Sponge ingredients

  • 100ml (about half a pod) cooled NESCAFÉ® Dolce Gusto® Americano Intenso.
  • 225g softened unsalted butter, with extra to grease the tins
  • 225g caster sugar
  • 225g self-raising flour
  • ½ tsp baking powder
  • 4 large eggs, beaten
  • 1 tsp vanilla extract
  • 85g walnut, some finely chopped and some roughly chopped

Buttercream icing

Coffee walnut cake recipe method

  1. Preheat your oven to 180°C. Grease your cake tins and line with baking paper
  2. Brew a NESCAFÉ® Dolce Gusto® Americano Intenso pod in your NESCAFÉ® Dolce Gusto® Pod Coffee Machine. Leave this to cool.
  3. Until fluffy and light in colour, cream together the butter and sugar
  4. Add the beaten eggs slowly, along with the flower gradually whilst beating in between
  5. Add your NESCAFÉ® Dolce Gusto® Americano Intenso coffee and walnuts. Mix gently with the whisk
  6. Divide the mixture evenly between your two lined tins. Bake for 20-25 minutes.
TIP: To check if they’re baked through, slide a knife into the centre – if it comes out clean, your cake is baked!
  7. Remove from the oven, leaving them in their tins to cool for 5 minutes
  8. Transfer to your wire rack
  9. In the meantime, make your vanilla buttercream by beating the butter, icing sugar, and vanilla extract until pale and fluffy. Add a dash of NESCAFÉ® Dolce Gusto® Americano and the roughly chopped walnuts and mix
  10. Allow this to cool in the fridge for 20 minutes
  11. When the cakes are cold and the buttercream is chilled, add the buttercream to the flat side of each cake
  12. Either pipe (if you’re a superstar baker) or spread the remaining buttercream on top, decorating with the halved walnuts.
  13. Cut and serve to your loved ones!

How can I serve my coffee and walnut cake?

Now that you’ve made your coffee and walnut cake, what can you serve it with for an extra special treat, or for when guests come round? We’ve listed some yummy options here

A cup of coffee!

If you’re a true coffee lover, a cup of milky coffee, like our NESCAFÉ® Dolce Gusto® Flat White, is the perfect accompaniment to this coffee and walnut cake.

Yoghurt or a yoghurt substitute

Some people like a slice of cake as a snack! A good way to make this coffee and walnut cake heartier is to add a dollop of yoghurt. Of course, this can be substituted for coconut or oat yoghurt.

Fresh fruit

Alternatively, if fresh and sweet is more your vibe, fruits like raspberries, strawberries, bananas, and blueberries are ideal.
